RUSTIC STILTON & POTATO CAKE
Serves 4
The perfect accompaniment to a main dish, or great on its own as a light lunch.
Ingredients
2 sliced onions
1 tbsp vegetable oil
2 large cooked potatoes – cooled and cubed
6 medium eggs
30ml single or double cream
100g crumbled Blue Stilton
1 tsp chopped chives
Instructions
* Fry the sliced onions in the oil until caramelised. Add the cubed cooked potatoes.
* Mix together the eggs, cream, crumbled Stilton, chopped chives and season with black pepper.
* Pour cheese mixture over the potatoes and onions and cook over a low heat until nearly set, finishing under a hot grill. Sprinkle extra cheese over if required

A very boring but tasty dish is Stilton cheese and broccoli soup!
I am unsure of the recipe, but if you find one, try it, It tastes fab if you like that sort of thing.
cheese sauces are nice made with stilton - and it is strong so you use less and get loads of flavour. I like steak with stilton sauce. Broccolli or cauliflower cheese with stilton sauce and breadcrumb on top is nice
try wrapping a full piece of gammon around it with some blanched spring onions inside too, held together with cocktail sticks and roast in the oven, delicious

Warm the Stilton in a small saucepan, add a little creme fraiche and mix 'til it becomes a sauce, add more creme fraiche if it's looks too gloopy, then pour it over a thick slice of filllet steak.
